Detox Chicken Spinach Salad
So Saturday we made a roast pork shoulder with Guinness bbq sauce. It was fatty and delicious, and someday soon I’ll write up the recipe. But it was the equivalent of eating dessert for dinner(MF Doom anyone?), and after a meal like that we needed something fresh and spring and green. This isn’t a mayo laden chicken salad- this is a whole lot of spinach and spring greens loaded with everything you want, with a citrusy dressing that’s now become our go-to.
Detox Chicken Salad- serves 4 as a main
- 4 chicken breasts or thighs, cooked and shredded
- 2 bunches of raw baby spinach, approx 6 cups
- 2 avocados, diced
- 1 red bell pepper, diced
- 1/2 red onion
- 2 medium tomatoes
- 1 cup button mushroom, cored and sliced thin
- 1//2 cup almond or walnuts, lightly toasted
Dressing- whisk all together in a separate bowl
- 1/2 cup extra virgin olive oil
- lime zest
- 2 tablespoons lime juice
- 1 teaspoon salt
- about 5 twists of fresh ground black pepper
- 2 cloves garlic, minced
- 3 anchovy fillet, minced
First, toss chicken, pepper, avocado, nuts, onion and mushrooms in a bowl until combined. These are your hearty ingredients, so they need to be dressed first. (Now’s when I start categorizing ingredients as prudes or nudes, get it?????) Pour on a substantial amount of the dressing and massage it all together until the avocado starts to break down. This is starting to get vaguely sexual, so the spinach has to come in at this point to keep things wholesome. (What can I say- I work with 25 year old males in a food filled world, and their humor has started to wear on me. If you don’t get it, good, and please move on to the recipe.) Finally add the tomatoes, and toss everything together gently so the tomato doesn’t fall apart and the spinach stays sturdy. Dinner is served! Hope you survived the terrible jokes- happy cooking!
